Getting Our Roots Done

We were looking forward to cooking up the first FoodCycle meal of 2024, and both Gill and Dani were excited to see what produce they would be cooking with. On arriving at the church they were both equally overwhelmed by the sight of boxes and boxes of root vegetables: mainly swedes and parsnips. This was going to be a challenge to come up with a tasty meal.
But before long Gill and Jordi had come up with a menu plan , and Gill, Dani and the two other FoodCycle Cooks were soon busy peeling, chopping and prepping veg. By the time David and the rest of the host team arrived the vegetables had been transformed into a delicious meal. It was David’s debut at FoodCycle and he did a grand job serving the guests, starting with steaming bowls of vegetable soup. The guests certainly enjoyed them and David came back doing his best Oliver Twist impression, “Please sir, may I have some more?”
The next course was a swede and parsnip bake, with roasted veg, potatoes and gravy. And to finish off, the guests were served up a delicious fruit sponge with custard. At least there was no sign of any root veg in the dessert!
